Whenever I make this it comes out great! I just tried this recipe with 1/2 a tablespoon of instant coffee (fine blend) instead of cocoa. It was very tasty topped with vanilla icecream! I’m in the UK and find Dove’s Farm (gluten free) plain white flour perfect for this.

Question: Gluten/wheat & Fruit/fructose free questions:

My son (almost 3) is gluten/wheat, caffeine, fruit/fructose and tomato intolerant via hair testing. He has not had a solid stool since birth and gets various raised rashes. I am all new to this, I have been to countdown today to see what is on offer. Any tips, tried and great recipes for a 3 year old. I have other children with no intolerances it seems so at a bit of a loss where I start with snacks and meals!! Many thanks

Recipe: Apple & Cinnamon Quinoa Cake

This is a delicious gluten free cake that I have adapted from other recipes.  The quinoa gives the cake a lovely texture which generally can’t be achieved by using rice flour alone.  Rinse the quinoa very well before cooking, and cook in plenty of water so it’s very soft, not al dente as you would use for salads etc.  I also sometimes add in about ¼ cup finely chopped crystallized ginger, and also use a 50/50 mix of apples and feijoas when they’re in season.
