Here’s one of my favourite gluten-free recipes for you. So quick, simple & tasty…enjoy!

Jump-in-the pan chicken

3 skinless chicken breasts (about 150 grams each)
2 tbsp flour
Salt & freshly ground black pepper
2 tbsp olive oil
1 tbsp butter
1 garlic clove, crushed
4 bay leaves
2 tbsp capers, well rinsed
125 ml white wine
1 tbsp lemon juice
2 tbsp parsley

Flatten chicken between 2 sheets of greaseproof paper until very thin.  Tear into little rags & toss in seasoned wheat-free cornflour.
Heat olive oil & butter.  Add chicken & flip chicken pieces in the pan over high heat so they “jump”.  Cook till golden.
Add garlic, bay leaves, capers salt & pepper. Add wine while jiggling the pan. When wine is reduced add lemon juice & chopped parsley. Jiggle pan until sauce comes together & looks creamy.
Serve immediately with rice, noodles, mash or a simple green salad.
