Lemon cake mix with icing
Pros
Instead of making a cake I made muffins which turned out great.
Great tasting
Cons
Didn’t like the icing
Bottom Line
Definitely will use again but without the icing!
Ingredients
Cake mix:
Sugar, maize flour, maize starch, vegetable oil (emulsifiers (471, 477, Soy Lecithin), antioxidant (307), thickners (1422 (maize), 412, 415), milk solids, glucose syrup solids, emulsifers (475,433), egg white powder, raising agents (450,500), mineral salt (339), lemon oil (0.6%), lemon flavour (0.3%).
Gluten free icing:
Icing sugar, tapioca starch.

a friend made it when there was a shout for morning tea and it was lovely she made it into mini loaves and iced them. beautiful

I was really impressed with this. It was cheap and so easy to make, just add water. For a packet cake (which I would never normally buy) it was delicious. I found it in countdown supermarket for $4.90 which is cheaper than buying gluten free flour to make one from scratch.
