Gluten/Dairy/Egg Free Chocolate Cake ›

Whats left when you take all those out?  A really yummy, really easy, fail safe chocolate cake.  I made this for my youngest’s 1st birthday, he suffers from multiple food allergies and everyone laughed at the idea of a cake with no good stuff in it.  Well it disappeared within minutes once people tried it.  This cake was so great as we were hosting a few people with different dietary needs - it ticks pretty much all the boxes.

Chickpea & Rice Medallions/Nuggets ›

I recently doctored this recipe from a magazine and it turned out great.  Especially for kids, the medallions/nuggets are easy to eat and they can dip them in sauces.  The base recipe is Gluten and Dairy free and you can add anything you like for taste.

Wholegrain Chocolate Slice ›

These are delicious and also full of wholegrains, so a little bit naughty but a little bit good too! I actually made this recipe up the other night when I was making some anzac biscuits for the kids. I thought I’d just change the oats to something else and these biscuits were born. I’m not 100% sure about the cooking time but just keep them in the oven until they look cooked and slightly crunchy (otherwise they may just crumble to pieces). Could also be iced with icing sugar, water and cocoa but personally I found them sweet enough.

Sticky Date Pudding ›

I have just discovered this dessert and it’s absolutely devine. Everyone asked for seconds and no-one realised it was gluten free as it was so soft, airy, and moist. Am looking forward to entertaining again just so I can make it! You could also just make the cake without the sauce and it would still be delicious.

Mmmmmm a delicious way to enjoy spuds, this is very similar to a Julia Child recipe for Potato Gratin. Perfect for entertaining, because you can make them a few hours or even a day ahead of time

Cheese and Pumpkin Scones ›

This recipe is based on Teresa’s excellent Kumara Scones, but came about because I didn’t have all the ingredients and needed to make do. It worked out extremely well but hasn’t been tested again yet.

This is actually a scone recipe – but makes a good pizza base!! And very cost effective. Makes two medium pizza bases – or one super large one.
