I’ve got this recipe in my Gluten-Free Food cookbook (Lyndel Costain & Joanna Farrow).  Unfortunately I live where it’s difficult if not impossible to find a variety of grains.  I do have millet grains and quinoa flakes…think I can interchange them??

Yes, it’s not a typo, this is a cake made in a mug…the dangerous thing is it only takes 3-3 1/2 minutes in the microwave!

This is a gluten-free adaptation of my old Brownie recipe.  The texture is halfway between a cake and a brownie.  This is a big recipe so once it’s baked I freeze half so we don’t make pigs of ourselves and eat the whole lot in one day.

These are SO good and they’re pretty quick too. The time consuming part is creaming and icing them.

Flat Bread ›

I really missed the softness of bread, but didn’t like the taste or texture of commercial gluten free products .This recipe is easy and quick to make. Lovely fresh from the pan, split and filled with your favourite filling, a great substitute for real bread. You can even toast it.

A Christmas favourite in our house. These can be enjoyed by anyone and everyone. The end product may be a bit crumblier than gluten containing pies, but they still taste delicious.
