I’ve got this recipe in my Gluten-Free Food cookbook (Lyndel Costain & Joanna Farrow).  Unfortunately I live where it’s difficult if not impossible to find a variety of grains.  I do have millet grains and quinoa flakes…think I can interchange them??

This is a great and super easy way to use up your left over mashed spud from dinner the night before.  Great for a quick lunch or snack or you could even pop an egg on top for a bit of a fry up breakie. I make this for my toddler’s daycare lunches the morning of, its just so easy, and if I’m making mashed spud for dinner its no extra work to do a little extra for a quick lunch.

This is a very low bread with a crisp crust and soft crumb. Very quick to make and doesn’t require yeast! To use for toast etc, you will need to cut it into quarters and then horizontally.

Have you got a waffle iron hiding in the back of the cupboard? Dust it off and make these easy waffles, great with jam or maple syrup for breakfast, peanut butter and jam for lunch, or fruit and ice-cream for dessert.
I make a double batch of these on Sunday mornings and freeze the leftovers to pop in the toaster as they are needed during the week - they make an easy brekkie with fruit and yogurt that the kids just love.
