All purpose Gluten Free Flour

This is a great flour base for general cooking and baking…
Ingredients
2 cups white rice flour
2/3 cup potato starch
1/3 cup tapioca flour
Method
Mix all ingredients together and store in airtight container.

Hi there. This flour makes delicious pikelets and pancakes. Tastes better than those made with gluten flour!

I have grown up with home made whole meal bread and so am used to using more whole grain flour than refined white flours.
I have recently discovered I am gluten intolerant and have been making my own flour mix that gives me a closer resemblance to the roughage that whole meal flour gives.
I am lucky enough to have access to a bench top mill and it is only used to mill gluten free grains. This allows me to mill organic brown rice for the rice flour component of this all purpose flour mix.
I have also found that adding a 5th part of a gluten substitute I found at Liberty Market in Christchurch when I actually use the flour really helps the backing as well.

I have been looking at gluten free websites for ages and recipes keep telling me to use gluten free all purpose flour, but I cant find it ANYWHERE in little ol’ queenstown! Thanks heaps, I know where I can get the ingredients for your flour, so this makes things so much less frustrating for me!
