Almond Macaroons

Ingredients

2 Egg Whites (room temp eggs)
100g Caster Sugar
125g Ground Almonds
Blanched Almonds, or Almond slivers to decorate

Method

Preheat oven to 180oC. Line a baking tray with baking paper. Whisk the egg whites until stiff. Gradually whisk in the sugar, a spoonful at a time, until the mixture becomes thick and glossy. Carefully stir in the ground almonds. Place tablespoons of mixture onto the baking tray, about 4cm in diameter, spacing slightly apart. Press a blanched almond into the top of each one. Bake for 15-20 mins until only just firm. Leave on the paper to cool. Makes approx 20.
