Apple Walnut Cake

Ingredients
2C Raw Apple, cut into small cubes
2 Free Range Eggs
1/2C Raw Sugar
1/3C oil
1/2C Chopped Walnuts
1 1/2C Rice Flour
1/2t Cinnamon,
1t Vanilla Essence
Pinch of Salt
1/4t Baking Soda
Method
Preheat oven to 175oC. Grease 20cm cake tin. Lightly beat eggs. Combine apple, eggs, sugar, oil, walnuts and vanilla. Sift flour, cinnamon, salt and baking soda. Add flour mixture to apple mixture. Mix well. Pour into prepared tin. Bake approx 1hr.

Tried this recipie. Tastes lovely but is very crumbly. I have a couple of ideas to try to see if I can get a better texture. Will let you know if they work.
