Baked cheesecake

Pretty fattening, but very yummy!
Ingredients
250g rice cookies
100gs butter
3x 250g pottles cream cheese (thats the pretty fattening bit)!
1 cup sugar
1 teaspoon sugar
2 large or 3 small eggs
Berries or fruit pulp etc to serve
Method
Preheat oven to 160 degs with rack below half way
Spray or grease cake tin or even better a springform tin as it gives a better finished look.
Crumb cookies in food pocessor . Melt butter and stir into biscuit crumbs.
Press mix into bottom of cake tin or springform tin.
Beat cream cheese and sugar till soft and fluffy using food processor or beater. Beat in vanilla then eggs one at a time.
Pour mix onto biscuit base.
Bake for 40-50mins until centre is firm without letting top brown too much (if it looks like it is getting too brown, cover the top with baking paper)
Turn off oven and leave cheesecake in there until it cools.
Prior to serving top with berries or fruit pulp. I havent tried it with this cheesecake but to make an easy fruit sauce, you can mix about 1/4 cup (or desired amount) of jam with 2 or 3 tablespoons boiling water. Add more water if it is too thick.

absolutly yum. i have used same method many times but wth the adition of 1/2up of baileys irish cream instead of vanilla, and chcolate or coffee in the base.
I find rice cookies usefull for all sorts of dishes that call 4 buiscut base
