Baked Spinach Flan

This dish is very similar to a vegetarian lasagne, but without the pasta. Great for taking to work and reheating for lunch.

Ingredients

2 Large Eggplants, peeled and sliced
1T Olive Oil
1 Large Onion, chopped
2 Cloves Garlic, crushed
6 Tomatoes, diced
3T Tomato Paste
1T Fresh Oregano, chopped
350g Cooked Spinach, drained and squeezed
250g Ricotta Cheese
220g Feta Cheese
1/2C Parmesan Cheese
1t Nutmeg
3/4C Fresh Basil, finely chopped
8 Eggs, beaten
1/2C Cream
220g Grated Tasty Cheese
Seasoning

Method

Place eggplant slices on a greased baking tray. Bake in the oven for 20 mins at 200oC. Heat oil in frypan, add onion and garlic and saute until onion is softened. Add tomatoes, tomato paste, oregano and seasoning and heat through. Combine spinach, ricotta, feta, parmesan, nutmeg, basil and seasoning. Combine eggs and cream. Layer a large casserole dish with roasted eggplant, then tomato mixture, then spinach mixture, then pour over egg mixture. top with grated tasty cheese. Bake at 180oC for 45 mins or until brown. Serve with salad.

Awesome recipe! Nowadays people don’t realize the richness and goodness of spinach. Some children have started to eat spinach after watching “Popeye the sailor”. This one is surely going to be healthy and tasty due to some really good ingredients like eggplants, grated tasty cheese, cream, olive oil, cloves garlic, onion and so on.
