Banana Coconut and LSA muffins

Ingredients

1 1/2 cups of gluten free flour
2 teaspoons of baking powder
1/4 cup whey protein powder (any flavour)
2 ripe mashed bananas
1/2 cup trim milk
1/2 cup shredded coconut
1/2 cup of honey
1/4 cup agave syrup
1/4 teaspoon stevia
1/4 cup LSA (linseed, sunflower, almond mix)
Zest of 1 lemon

Method

Beat eggs, milk, honey, agave syrup, stevia, lemon zest and mashed bananas.

Mix or sift together dry ingredients.  Gently fold wet ingredients through the dry stuff until just mixed.  Do not overmix.

Portion into a greased muffin tin, put half a walnut on top of each muffin (optional).

Bake at 180 degrees C for 20-25 minutes.

Hi there,

I wuld love to try these muffins, however, I’ve had a hard time finding stevia in NZ. Where do you purchase yours? Also, where did you find agave syrup?

Hi, stevia can be purchased at supermarkets and health food stores.  I get my agave syrup from Commonsense Organics.
