Basmati Rice Salad

Great as a side salad, or as a packed lunch
Ingredients
1 1/2C Yellow Lentils
1 1/2C Basmati Rice
315g Cannelloni or Soya Beans, cooked
4 Tomatoes, chopped
1 Cucumber, seeded and chopped
2T Fresh Oregano leaves, chopped
1/2C Fresh Basil leaves, chopped
1T Garlic chives, chopped
1 Lemon , juice
1T White Vinegar
Method
Soak and cook lentils as per instructions. allow to cool. Cook rice, drain and allow to cool. combine all ingredients and mix well.
