Caramelised Onion and Corn Bread

Ingredients
2T Macadamia Nut Oil (or another flavoured oil)
3 Onions, finely sliced
1T Brown Sugar
3/4C Polenta
1C Brown Rice Flour
2t Baking Powder
1/3C Linseeds
1/4C Psyllium Husks
1T Fresh Thyme
1C Milk or milk alternative
1 Egg, lightly beaten
Method
Place oil in a non-stick frying pan. Add onions and brown sugar and sauté over high heat for 5 minutes or until golden brown. Place polenta, rice flour, baking powder, linseeds, psyllium husks, thyme and three quarters of the onion mixture in a large mixing bowl and stir until combined. Combine milk and egg and stir into dry ingredients. Spoon into a lightly greased, lined loaf tin and press down firmly. Bake in a hot oven, 200°, for 20 minutes, top with remaining onions and bake a further 15 minutes. Slice and serve warm.
Note: Could also spread grated cheese over top of loaf.
