Cheese muffins

These are excellent as a lunchbox filler. They are quite light and fluffy. Lovely heated! Best to eat on day one or two, as with most gluten free baking. Really easy and quick to make. My kids loove these.
I got this recipe from the nutritionist at Christchurch Public hospital.
Ingredients
1 cup breadmix or g.f flour (although I have found breadmix gives a lighter fluffier result)
1/4 cup rice flour
1/2 teaspoon salt
1 Cup grated cheese
1 teaspoon sugar
1/8 teaspoon cayenne pepper (optional)
1 egg
150ml milk
1 teaspoon mixed herbs (optional)
Method
Preheat oven to 200degs
Combine dry ingredients, add cheese.
Beat milk and egg mixture together and then add into dry ingredients. Mix until just combined.
Pour into mini muffin tins and bake for 10-12 mins.

Hi, I noticed when I made these today there was no leavening agent included in the recipe so i added 1 tsp of baking powder. I cooked them in miniature muffin pans and they still came out very dense even with the added bp. Any suggestions?

For all the 1 1/4 cups of flour, i used gf self rising flour, the muffins turned out light and fluffy
