Chicken Noodle Salad

Ingredients

1 Small Chicken, about 1.5kg
3cm Fresh Ginger, peeled and grated
1 Onion, halved
Salt
225g Rice Vermicelli Noodles
Lettuce leaves - any sort
Half a Cucumber, cut into thing strips
4 Spring Onions, chopped
4T Toasted Sesame Seeds
60ml Rice Vinegar
1T Tahini
2T Sesame Oil
2t Soy Sauce

Method

Place the chicken in a large saucepan, cover with water, add the ginger, onion, and salt. Cover and bring to the boil, reduce the heat and simmer for 45 mins. Drain the chicken (keep the water for stock), remove the skin, take the meat off the bones and shred it quite finely. Discard the skin and bones. Put the noodles in a bowl, cover with boiling water and let them soak for 5 mins. Drain and rinse under cold water. Place the noodles in a bowl, combine with the prepared chicken and vegetables. Combine the last 4 ingredients into a small bowl and pour over the salad. Sprinkle with the toasted sesame seeds.
