Chicken Paella

Simple one pot dinner
Ingredients
2-3 boneless chicken breasts chopped into bite sized portions
2-3 tablespoons cooking oil + a little butter
1 large onion
3 cloves or minced garlic to own liking
1 teaspoon each: cummin, tumeric, g.f chicken stock powder
1 1/2 cups long grain rice (sometimes I use jasmine or basmati as well) - washed well
400 g tin g.f italian or any other flavoured tomatoes (plain is fine too)
1 cup g.f chicken stock
1 cup frozen peas
5-6 slices bacon trimmed of rind and fat
Method
In large saucepan heat oil and butter. Fry chicken and bacon quickly until cooked. Add onion, garlic, spices, chicken stock powder and rice. Cook for 1 minute.
Stir in tomatoes and chicken stock.
cover and simmer gently for 20mins, stirring occasionally to stop the rice from burning and sticking to the bottom of pan.
Add peas and fluff with fork. Stand 3 mins before serving.
