Chicken, Parmesan and Spinach Loaf

2 Chicken Breasts, skin off
1T Olive Oil
1 Onion, finely chopped
2 Rashers Bacon, diced
250g Cooked Spinach, well drained and squeezed
3/4C Olive Oil
2 Cloves Garlic, crushed
2 Eggs
2 Egg Yolks
1t Mustard Powder
3/4C Parmesan Cheese, grated
1/2C Sour Cream
4T Fresh Parsley, finely chopped
220g Grated Tasty Cheese
1t Paprika


Poach chicken and shread. Fry onion and bacon in 1T olive oil. Combine shredded chicken, onion, bacon, and spinach and mix well. Spoon into the bottom of a baking dish. Combine extra olive oil, garlic, eggs, egg yolks, mustard, parmesan cheese, sour cream, parsley, and seasoning in a blender. Pour over the chicken and spinach mixture. Top with grated cheese and sprinkle with paprika. Bake uncovered in oven for 35mins at 180oC or until browned. Serve with salad.

this is really yummy, and my husband loved it,  I added a few more veges along with the spinach, capsicums, mushrooms etc.
I wouldnt call it a loaf tho, more like a vegetable bake.

Yummy!! Had a friend around for lunch who is gluten free and it was a hit!
