Chocolate birthday cake

Very large, moist cake!  Easy to make and everyone who tries this cake loves it.

Ingredients

3 Cups sugar
2 cups g.f flour or baking mix (Horleys, simple or bakels is good)
1 cup g.f breadmix (I use bakels usually)
3 teaspoons g.f baking powder
3 teaspoons baking soda
3 eggs
1 1/2 cups sour cream
3/4 cup cocoa
1 1/2 cups strong coffee (I use decaff so that the kids can eat this cake)
2 teaspoons vanilla essence
1 teaspoon guar gum

Glaze

200g dark chocolate
50g butter
1 Tablespoon golden syrup

Method

Preheat oven to 180 deg

Spray large springform tin with oil or grease with marg or butter

Place all ingredients in bowl and mix well. I like to use an electric beater as its a huge mixture and much easier.

Put in tin and bake for 70-75mins

Glaze with icing when cake is cooled (you can do it while it is warm if you prefer the glaze to melt through the cake also…...this works well too).

Glaze

melt all ingredients together over boiling water, or in microwave and mix until smooth.

This does look quite big, do you ,mean a 24cm springform tin, is it quite high?  I need one to fit in a 10c cake pan you see.
