Chocolate Truffles

Ingredients
50g Butter
100g Cooking Chocolate
1C Icing Sugar, approx
1T Rum
1t Cocoa
Coconut
Method
Put butter and chocolate into a saucepan. Heat gently, stirring until butter and chocolate have melted. Add 1/2 cup of the icing sugar. Stir until mixture is thick enough to handle. Stir in the rum and cocoa. Add enough of the remaining icing sugar to make a stiff mixture. Measure tablespoonful of the mixture and shape into balls. roll in coconut and chill until firm.
Makes 15 approx.

A good recipe. I like that it uses regular ingrediants. I added chopped raisens and toasted almond slithers to make rum’n'raisen balls. Very tasty.A little like eating a ball of icing with tasty bits in. I’d consider it more of a ‘candy’.

These are absolutely delicious! You can use vanilla essence as substitute for rum, makes them just as nice and the kids love them!!!
