This is a GF option on an a favourite recipe and we think you would be hard pressed to tell the difference.
half a can condensed milk
1 cup coconut
grated rind of 1 or 2 citrus fruits
1 packet of Arnotts Rice cookies.
1 cup GF icing sugar
2 tbsp soft butter
Melt butter. Add condensed milk, coconut, finely grated rind of fruit and the crumbs made from crushing the biscuits. ( We add dark chocolate roughly chopped for extra luxury)
Mix well and press into a a lightly buttered or sprayed dish.
Make iciing by mixing icing sugar with sift butter. Add juice a few drops at a time, in order to achieve desired consistency. Spread over base and sprinkle coconut over top if desired. Refrigerate until firm, then cut into slices. Enjoy.
