Corn Bread

Ingredients

1C Cornmeal
1/2C Rice Flour
1/2C Tapioca Flour
1t Xantham Gum
2T Sugar
1T Baking Powder
1/2t Salt
2 Free Range Eggs
1C Milk
1/4C Oil

Method

Preheat the oven to 210oC.  In a medium bowl, combine the cornmeal, rice flour, tapioca flour, xantham gum, sugar, baking powder, and salt. In a small bowl, beat the eggs, milk, and oil slightly to combine. Add the egg mixture to the flour mixture and stir until the batter is smooth. Do not overbeat. Pour into a greased 9 x 9 x 2 inch baking pan. Bake for 20-25 minutes or until golden brown.
