Dried Fruit Compote

Ingredients
1 Orange
2T Honey
300ml Water
150ml Orange Juice
1t Vanilla Essence
85g Dried Figs, halved
85g Dried Apricots
85g Pitted Prunes
Method
Peel the zest in long strips from the orange and cut into thin julienne strips. Halve the orange and squeeze the juice. Combine the zest, juice, honey, vanilla, and water in a saucepan. Bring the mixture to the boil, stirring until the honey is dissolved, then add the dried fruit and simmer, covered for about 15 mins until they become plump and soft. Allow to cool and keep covered in the fridge until you are ready to serve. Delicious with museli, porridge, pancakes, or just on it’s own with some greek yoghurt.

Great sounding recipe but I would hold back the fresh orange juice and add it once the other ingredients have cooled. If you boil citrus fruit juices, the vitamin C is lost.
