Easy Waffles

Have you got a waffle iron hiding in the back of the cupboard? Dust it off and make these easy waffles, great with jam or maple syrup for breakfast, peanut butter and jam for lunch, or fruit and ice-cream for dessert.
I make a double batch of these on Sunday mornings and freeze the leftovers to pop in the toaster as they are needed during the week - they make an easy brekkie with fruit and yogurt that the kids just love.
Ingredients
3 eggs
1 c milk
1/2 c melted butter or mild flavoured oil
2 c gluten free flour mix (I use rice, potato and tapioca but any mix will do)
1 tsp gluten free baking powder
2 Tbsp sugar (leave this out if you will be serving them with savory toppings)
Method
Beat the eggs til thick
Add milk and melted butter to eggs and mix well.
Add dry ingredients and mix well.
Spoon a couple of dollops into your preheated waffle maker and cook.
Cool on a wire rack.
NB. gluten free waffles have a tendency to stick so I spray the waffle maker lightly with cooking spray for the first couple of waffles that I cook.
I love waffles for breakfast & they are definitely easy to make.

ok, this will be the first time i make these…
I am new to GF
with this recipe do you use 1 of the flours mentioned? od do you use some of each and how much?
