Egg and Zucchini Hash Browns

Ingredients
8 Eggs, lightly beaten
1 Large Zucchini (corgette), grated
4T Cream Cheese, softened
3/4t Nutmeg
Seasoning
Olive Oil
Method
Combine all ingredients, except oil, in a bowl. Heat oil in a large frypan and pour egg mixture into circles and cook until golden brown on both sides and egg is set. Makes 12.
