Flat Bread

I really missed the softness of bread, but didn’t like the taste or texture of commercial gluten free products .This recipe is easy and quick to make. Lovely fresh from the pan, split and filled with your favourite filling, a great substitute for real bread. You can even toast it.
Ingredients
1 cup bakels gluten free flour
2 tsp gluten free baking powder
pinch salt
1 egg
1 tbs melted butter or margarine
milk.
Method
Heat frying pan (I use an electric one)
Mix flour and BP and salt in a bowl. Melt butter/margarine in measuring cup, add a little milk then beat in the egg, top the measuring cup up with milk to make one cup. Pour liquid into dry ingredients and mix, dont over mix it.
Cook in large tablespoonfulls until golden brown, turn and cook until the other side.
The centre will be firm to the touch when done.
I tried this recipe with other GF flour mixes and the Bakels one gives the best texture.
