Gail’s Carrot Cake

A delicious Carrot Cake that is both Gluten Free and Dairy Free…
Ingredients
2C Raw or Brown Sugar
1C Olive Oil
4 Free Range Eggs
1/2C Sultanas/Raisins
1/2C Chopped Walnuts
3C Grated Carrot
3tsp Ground Cinnamon
1C Rice Flour
1C Glutinous Rice Flour
2tsp Baking Powder
1tsp Baking Soda
1/4 tsp Salt
1tsp Xantham/Guar Gum
Method
Preheat oven to 180oC. Mix sugar, eggs and oil until fluff. Add 1C flour, mix, then remaining dry ingredients, mix. Then add walnuts, sultanas and carrots. Combine well, then pour into a 23cm/9 inch greased tin and bake for approx 1 1/2 hours or until cooked. When cool, dust with icing sugar, or top with a cream cheese icing recipe.
