Gail’s Self Crusting Gluten Free Quiche

By Teresa on 12 June 2007 | Viewed 56188 times

Quick, and easy quiche for lunches, snacks or as a side dish for dinner…

Ingredients

3 Free Range Eggs
1C Milk
1C Rice Flour
1t Baking Powder
1C Grated Cheese
Salt & Pepper
Any vegetables you like cut into small pieces. Eg: onions, mushrooms, carrot, corgettes, spring onions etc.

Method

Mix together eggs, milk, salt and pepper, then add flour and baking powder until just combined. Add in vegies and cheese. Pour into 20/23cm greased tin and bake at 220oC for 20-30 mins. Leave 5-10 mins before turning out.

Very simple recipe which worked well as don’t have to make a separate crust. The flavour comes from the other ingredients that you choose. I put in fresh coriander but feel that next time would use coriander powder instead. Thanks very much for such a simple & easy answer to my query.

I made this last night and doubled the recipe to feed more, it was beautiful!  Will definately make again.  I’m new to this gluten free thing and was surprised at how good it tasted.

I was looking for inspiration for using up leftovers when I came across this recipe.  We used a variety of relishes to customise our flavours after it was on our plates.  Superb and so easy, I can see this will be high on our list of things to make if we have leftovers again.
