Gail’s Self Crusting Gluten Free Quiche

Quick, and easy quiche for lunches, snacks or as a side dish for dinner…
Ingredients
3 Free Range Eggs
1C Milk
1C Rice Flour
1t Baking Powder
1C Grated Cheese
Salt & Pepper
Any vegetables you like cut into small pieces. Eg: onions, mushrooms, carrot, corgettes, spring onions etc.
Method
Mix together eggs, milk, salt and pepper, then add flour and baking powder until just combined. Add in vegies and cheese. Pour into 20/23cm greased tin and bake at 220oC for 20-30 mins. Leave 5-10 mins before turning out.

this is a great simple and easy to make quiche, fantastic for using up leftovers.

I made this last night and doubled the recipe to feed more, it was beautiful! Will definately make again. I’m new to this gluten free thing and was surprised at how good it tasted.

Very simple recipe which worked well as don’t have to make a separate crust. The flavour comes from the other ingredients that you choose. I put in fresh coriander but feel that next time would use coriander powder instead. Thanks very much for such a simple & easy answer to my query.
