Ginger Crunch

Delicious ginger crunch, that all my non-gluten free friends/family thought was the “real deal”!!
Ingredients
Base
125g butter, softened
1/2 cup White Sugar
1 1/2 cups Healthries Simple wheat & gluten free Baking mix
1 teaspoon gluten free baking power
1 teaspoon ground ginger
Ginger Icing
75g butter
1 cup Icing Sugar
2 tablespoons Golden Syrup
3 teaspoons ground ginger
Method
1) Preheat oven to 190*C.
2) Cream butter and sugar until light and fluffy.
3) Sift flour, baking powder and ginger together.
4) Mix into creamed mixture. Turn dough onto a lightly floured board. Knead well. Press dough into a greased 20 x 30 cm sponge roll tin.
5) Bake for 20 25 minutes or until light brown.
6) Pour ginger icing over base while hot and cut into squares before it gets cold.
Ginger Icing
In a small saucepan combine butter, icing sugar, golden syrup and ginger. Heat until butter is melted, stirring constantly.

agree with all these comments - great recipe! I made it with lite Olivio in place of butter for a dairy and gluten free friend, it worked really well.
