Ginger Fingers

Ingredients
1 1/4C Gluten Free Flour
1/4C Maize Cornflour
1 1/2t Bicarbonate of Soda
1/2t Cream of Tartar
2t Ground Ginger
100g Soft Brown Sugar
2T Golden Syrup
2T Butter
1 Egg, lightly beaten
Icecream/ Yoghurt for serving
4 Med Bananas, sliced
Method
Sift the flours, bicarbonate of soda, cream of tartar and ground ginger together in a large bowl. Stir in the brown sugar. Place the golden syrup and butter in a small saucepan and stir over low heat until melted. Allow to cool slightly. Stir the egg and golden syrup mixture through the dry ingredients to form a dough. Roll two teaspoons of dough into a ‘sausage’ shape approximately 1 cm wide and 5 cm long. Continue to shape the remaining mixture, then arrange on two baking trays, lined with baking paper, leaving room for spreading. Bake in a hot oven, 200° for 15 minutes, or until golden and cooked through. Allow the fingers to cool slightly on the tray before removing. Serve 2 biscuits in a dessert bowl with 2 scoops ice cream/yoghurt and sliced banana, or as an accompaniment to a hot drink for morning or afternoon tea.
