Gluten, Egg, & Dairy Free Pizza Base

This crispy pizza base tastes so delicious that no-one would even guess it is gluten-free…
Ingredients
1T Gluten Free Dry Yeast
2/3C Brown Rice Flour or Bean Flour
1/2C Tapioca Flour
2T Dry Milk Powder or Non-Dairy Milk Powder
2t Xantham Gum or Guar Gum
1/2t Salt
1t Gelatin Powder
1t Italian Herb Seasoning
2/3C Warm Water
1/2t Sugar or 1/4t Honey
1t Olive Oil
1t Cider Vinegar
Cooking Spray
Method
Preheat oven to 425oF. In a medium bowl using regular beaters, mix the dry ingredients together. Add the warm water, sugar (honey), oil, and vinegar. Beat on high speed for 3 mins. The dough should resemble soft bread dough. If its too stiff, add a little more water and mix. Put mixture into a 12 inch pizza pan or on a baking sheet that has been coated with cooking spray. Sprinkle the dough with flour to prevent sticking when you spread it out. Make the edges thicker to contain the toppings. Bake the pizza base for 10 mins, remove from oven and spread the pizza base with all your favourite toppings. Bake for another 20-25 mins or until top is nicely browned.
