Apple and Cinnamon Muffins

Easy, no-fuss, delicious muffins…
Ingredients
1/3C Sugar
1C Rice Flour
1t Baking Powder
3/4t Salt
1/2t Baking Soda
1t Cinnamon
3T Canola oil
1 Unpeeled Apple, finely grated
Method
Combine dry ingredients in a medium bowl. Mix the wet ingredients in a small bowl and quickly add to the dry ingredients. Stir until just combined, pour into muffin tins and bake at 180oC until golden brown and firm. Makes 6 large muffins.

These were great & so easy to make. I added just over 1/4C of milk (which I actually dissolved the baking soda in). They did take around 30mins to cook though.

Like Amanda I added milk to the recipe and changed the apple to a cup of frozen berries…. delicious…. the next batch i made with a spoon of cream cheese in each - soooo good!

Not a good result. Thjey fell apart as there is no binding ingredient.
