Chocolate Brownies

This Gluten Free version of the classic brownie also makes excellent rum balls…
Ingredients
200g butter
200g dark chocolate
1 cup of brown sugar
3 eggs, lightly beaten
1 tablespoon vanilla
¾ cup Gluten Free plain flour (see all purpose flour recipe)
2 tablespoons cocoa
Method
Heat the butter, chocolate and sugar in a saucepan over a low heat, stirring constantly, unitl melted and smooth. Cool slightly. Add the eggs and vanilla and mix well. Add the sifted flour and cocoa and stir to combine. Bake in a 18cm square pan (greased and lined) at 180°C for 20 minutes or until just set.

This brownie recipe rocks! I have made it several times since and have altered it a little by adding half a cup of ground almonds to the mix and it gives it a little more texture to it, not to mention a hint of nutty flavour.
