Carrot and Banana Muffins

A fantastic basic recipe for Gluten Free and Dairy Free Muffins.You can also substitute the banana and carrot for grated apple or pear, chopped dates or apricots, coconut, figs, walnuts etc…

Ingredients

1C Sunflower Oil (not as heavy or flavoursome as olive oil)
3 Free Range Eggs
3/4C Brown Sugar, or 1/2C Honey
1 Banana, ripe, mashed
1C Grated Carrot
2/3C Rice Flour
2/3C Corn Flour
2t Gluten-Free Baking Powder

Method

Beat the oil, sugar and eggs. Add the banana and carrot. Mix the flours together. Gently add the liquid ingredients to the dry ingredients until just combined, do not overmix. Spoon into greased muffin pans and bake at 190oC for 25 mins.

Good combination of healthy and tasty ingredients like Sunflower Oil , Corn Flour ,Banana,Carrot and brown sugar. In our country people prepare carrot juice, which is tasty too. But this one’s great. Thanks for this mouth watering recipe and explaining the method.

Just made them, Yum!!!
easy, delicious and most (those that are left anyway) will be our dessert tonight.
I used cupcake paper cups (pattypans) it made 24.
I reduced cooking time by 8 minutes. Worked well.

Is there anyway to make this with less oil? It seems an awful lot and doesn’t seem very healthy….

this is the first time i have made muffins and i added coconut and walnuts they were amazing!!! and now my friend is going to make them to sell in their cafe smile
