Dessert Piecrust

Ingredients

60g Flaxseeds, ground to a fine powder
1t Fresh Lemon Juice
2-4T Iced Water
Manuka honey, stevia or maple syrup to taste
Pinch of Salt
180g Almonds, ground to a fine powder
1 1/2T Coconut Oil, melted

Method

Soak the flaxseeds in lemon juice and a couple of teaspoons of iced water for about 20 mins. Mix together with a fork and put aside. In another bowl, mix the honey, stevia or maple syrup with the salt, almonds and the melted coconut oil. Now combine the seed and nut mixtures together and knead gently like pastry until they are mixed thoroughly. Pour into a 22cm flan dish and, using your fingers, press the mixture into the dish along the bottom and sides. Prick with a fork and bake at 170oC for 15 mins. Let cool and you are ready to fill.
