Gingerbread

A lovely loaf that can be enjoyed by those who are Gluten Free and Dairy Free. Great for morning and afternoon teas. Or sliced and added to the lunchbox..
Ingredients
3/4C Rice flour
3/4C Buckwheat Flour
1t Baking Soda
1T Ground ginger
1t Cardamom Seeds crushed (optional)
7T Butter/Dairy Free Butter
1/4C Brown Sugar
1/3C Molasses
1/3C Golden Syrup
2 Free Range Eggs
3/4C Soy Yoghurt, or plain if you can use it
Method
Sift the flours together, add the baking soda, ginger and cardamom. Mix the butter, brown sugar, molasses and golden syrup over a low heat until dissolved. Allow to cool. Add eggs and combine all together. Pour into a greased loaf tin. Bake at 170oC for 75 mins.

Please clarify the following… I take it that “C” stands for Cup, a capital “T” for tablespoon and a lowercase “t” for teaspoon? Is this correct?
In case you were not aware of it…. but a NZ tablespoon is 15ml while Aus and european table spoon is 20ml.
