Golden Cookies

Delicious, melt in your mouth cookies and so quick and easy to make…
Ingredients
125g Butter
1T Golden Syrup
1/2C Sugar
1t Vanilla Essence
1 Free Range Egg
3/4C Rice Flour
3/4C Tapioca Flour
1/4C Gluten Free Custard Powder (I used Edmonds)
1t Baking Powder
Method
Melt butter and golden syrup over a low heat. Stir in sugar and vanilla. Allow mixture to cool slightly. Beat the egg and stir into the melted mixture. Sift the flours, custard powder and baking powder and add it to the melted mixture. Allow to cool for a further 4-5 mins or until it is manageable to handle. Roll teaspoonful size balls and place on a greased tray. Flatten with a floured fork and bake at 190oC for 12 mins or until golden brown. Makes approx 20.

I made these using Olivani and substituting the custard powder for plain cornflour and a teaspoon of sugar. Because of the olivani the mixture never firms up enough to roll into balls so just plopped the mixture on. A hit with several of the kids but not as much as the almost cookie time ones. Would make again and maybe would add a little icing to moisten.
