Hazelnut Crescents

Ingredients
1/3C Rice Flour
1/4C Cornflour
1/4C Caster Sugar
1 3/4C Ground Hazelnuts
100g Unsalted Butter, chilled, chopped
1 Free Range Egg Yolk, lightly beaten
1t Vanilla Essence
1/2C Icing Sugar to serve
Method
Preheat oven to 160oC. Grease and line 2 baking trays with baking powder. Sift flours into a bowl, add sugar and hazelnuts. Mix well. Rub butter into mixture and then stir in the egg yolk and vanilla. Stir until a soft dough forms. Turn out onto a floured surface and knead gently. Divide mixture into 2 and wrap in plastic. Refridgerate for 15 mins. Then roll each portion of dough into a 2cm thick log. Cut each log at 4cm intervals. Shape each piece into a crescent. Place on trays and bake for 15-20 mins or until golden. When cool, sprinkle with icing sugar.
