Lemon Tart

Ingredients
1C Rice Flour
1/2C Cornflour
1/2C Soy flour
150g Butter, chilled, chopped
2/3C Caster Sugar
2T Chilled Water
3/4C Mascarpone Cheese
3 Large Lemon, juiced, rind grated
4 Free Range Eggs at room temperature
Method
Preheat oven to 180oC. Grease and line a 3cm deep, 23cm base dish. Sift flours 3 times. Mix flours, butter and half the sugar in a food processor until mixture resembles crumbs. Add water and process until mixture comes together. Turn dough onto a lightly floured surface and knead gently. Shape into a 10cm disc and wrap in baking paper and place in fridge for 30mins. Then roll pastry out between 2 sheets of baking paper until 2mm thick. Shape into a 30cm disc. Line base and sides of pan and place in fridge for a further 15mins. Then line pastry with baking paper, blind bake (2/3’s fill the base with uncooked beans or uncooked rice) for 10 mins. Remove paper and beans/rice and bake for a further 5 mins until golden. Reduce the ovn to 160oC. Using an electric mixer, combine the marscapone, 1T lemon rind, 2/3C lemon juice and remaining sugar. Add the eggs, one at a time, beating well after each. Pour filling into pastry case. Place tart on a baking tray and bake for 45 to 50 mins, or until filling has set. Cool in pan, dust with icing sugar, top with lemon rind and serve with cream.

Good recipe! Tried it for the first time tonight, we are going over to friends and I’m in charge of dessert! My sister is gluten free so I thought I’d make a dessert that we could all eat without her having something different. When putting my pastry into the tin it completely fell apart! So I used my handywork to poorly stitch it back up again ); I’m sure I just did something wrong… ! Thanks for the recipe, haven’t left yet so don’t know what the overall thoughts on it are.. I’m sure it will be a hit!! (:
