Pan Fried Fish

Ingredients
1kg Fresh or Frozen Fish Fillets
2 Free Range Eggs, beaten
1/4C Water
1C Cornmeal
1/3C Potato Starch Flour (not the same as Potato Flour)
1t Salt
1/4t Pepper
Oil for frying
Method
Cut fish into serving size portions. Pat dry with paper towels. In a shallow dish or pie pan, combine eggs and water. In a zip-style bag, mix cornmeal, flour, salt and pepper. Preheat 1 inch of oil in a heavy frying pan unil a droplet of water crackles when added. Dip the fish in the egg mixture then coat with the flour mixture. Fry fish in hot oil on one side until golden, turn carefully and fry otherside until golden. Drain on paper towels.
