Peach Cobbler

Ingredients
8-10 Ripened Peaches (peeled and sliced)
1C Sugar
2T Cornstarch
1/2C Water
1C Rice Flour
2/3C Potato Starch Flour (or Cornstarch)
1/3C Tapioca Flour
1T Baking Powder
1t Baking Soda
1/2t Xantham Gum
1/2C Sugar
1t Ground Cinnamon
1/2t Salt
1/3C Shortening or 1 1/8C Butter
2/3C Milk
Method
Preheat oven to 200oC. In a large saucepan, combine the sliced peaches, sugar, cornstarch, and water. Cook and stir until thickened and bubbly. Remove from heat. Cover to keep hot. Meanwhile, in a medium sized bowl, combine the flours, baking powder, baking soda, xantham gum, sugar, cinnamon, and salt. Add shortening and mix until crumbly. Make a well in the dry ingredients , pour in the milk all at once. Mix until completely moistened but do not overmix. Transfer hot fruit filling to an 11 x 7 inch baking pan. Drop topping dough into 12 -15 mounds on top of the filling. Bake for 25-30 minutes or until lightly browned.
