Peanut Brownies

A Gluten Free twist on an old favourite…

Ingredients

125g Butter, softened
1C Sugar
1 Egg
3/4C Rice Flour
3/4C Glutinous Rice Flour (available from any Asian Grocery store)
1t Baking Powder
Pinch of Salt
2T Cocoa
1C Roasted Peanuts (or any other kind of nut if you choose)

Method

Cream butter and sugar until light and fluffy. Add the egg and mix well. Sift the flours, baking powder, salt and cocoa together and mix into the creamed mixture. Add cold peanuts. Roll tablespoonful of mixture into balls and place on a greased tray. Flatten with a floured fork. Bake at 180oC for 15 mins or until cooked. Makes approx 20.

These were so yummy!! I didn’t have the Glutinous Rice Flour but used Bakels GF Flour and that worked a treat.

These were delicious! I used Bakels too, instead of the Glutinous Rice Flour. All the family liked them and they turned out brilliantly.

These were awesome!! I used Bakels GF Flour instead of the Glutinous Rice Flour and they turned out brilliantly. The whole family loved them. If I can source the Glutinous Rice flour I will try making them with it.
