Sponge Cake

Ingredients
3/4C Cornflour
1t Baking Powder
3 Free Range Eggs
Pinch of Salt
1/2C Sugar
Method
Pre-heat oven to 180 C. Grease 2 x 8 inch sandwich tins. Sift the cornflour & baking powder together. Separate whites from yolks of eggs. Beat whites with salt until frothy. Add yolks. Gradually beat in sugar until mixture is stiff. Fold in sifted cornflour & baking powder. Put into prepared tins & bake for 20 mins. When cool, fill with mock cream.

Great recipe! So easy and fuss free! A new favourite in our house too. As said before, you can’t even tell the difference between this recipe and a store bought one!

Fabulous receipe, easy to make and just lovely. Will become a firm favourite. I used it as a base for a trifle. The family did not notice the difference from a bought one, thanks so much, highly recommended AAA+++
