Tortillas

Ingredients
1/2C Brown Rice Flour
1/2C Rice Flour
1/2C Potato Starch Flour
1/2C Tapioca Flour
1T Xantham Gum
3T Shortening
3/4C Hot Water
Method
In a large bowl, combine the flous, xantham gum and salt. Add shortening and cut until crumbly like breadcrumbs. Add water and stir with a spoon. Form into a ball with hands. Divide the dough into 12 balls. Press with a rolling pin, with lightly oiled plastic wrap on both the top and bottom of the dough. Heat a tortilla press or large frypan, until a droplet of water dropped on it crackles. Cook tortillas until bubbles form and the bottoms are lightly browned. Turn and cook the other side.
Serve with your favourite fillings.
Makes 12 tortillas
Finally a GF tortilla recipe that works!! And doesn’t crumble into a pile of , well, crumbs! :-p
Didn’t hve any tapioca flour so used cornmeal flour instead and it worked fine. Might add a bit fo salt next time though.

Added cornmeal instead of the 2nd round of rice flour; would probably use 1 cup of cornmeal next time. They were great, and made yummy tortillas with our mexican meal. Excellent
