Truffle Cake

Ingredients
250g Butter
250g Dark Cooking Chocolate
8 Eggs separated
250g Caster Sugar
250g Ground Almonds
150g Extra Chocolate to decorate
Almonds to decorate
Method
Preheat the oven to 180oC. Melt the butter and chocolate together in a bowl over a pan of gently simmering water and set aside to cool. Separate the eggs. Beat the yolks with the caster sugar until pale and thick, then stir in the ground almonds and cooled butter and chocolate mixture. Whisk the egg whites in a separate bowl until stiff and fold them into the mixture. Pour into a greased and lined cake tin 23-25cm round. Bake for 1 hour or until skewer inserted in the cake comes out clean. Cool the cake in the tin, then remove and deocrate. To decorate, simply melt the chocolate and spread lavishly over the top of the cake. Sprinkly sliced or slivered almonds around the edge of the cake.

I have made this 3 times and it has worked out perfect each time. It also works at 1/2 the recipe. So good that I am making it for Christmas Day with a berry coulis.
