Tuscan Apple Cake

Ingredients
2 Large Free Range Eggs
1/4C Castor Sugar
200g Rice Flour
2t Baking Powder
2t Lemon Zest
2/3C Milk or milk alternative
800g Organic Apples - peeled, sliced thinly
1/4C Demara Sugar
Method
Preheat oven to 180oC. Grease a 22cm tin and dust with flour, shake out excess. In a large bowl, whisk the eggs, add the castor sugar and whisk again. The add the flour, baking powder, lemon and very slowly whisk in the milk. Set aside for 15 mins. Pour batter into a tin and arrange apples on top, pressing down. Sprinkle with the demara sugar and bake for 45 mins.

Made this recipe for my 14 year old grand daughter who is gluten intolerant. Really easy to make, nicely flavoured and great texture.

We have made this twice and really enjoy it. Its incredibly easy to make and something I would happily serve up to non coeliacs to see if they could tell the difference!
