Only got 5 mins to get some bikkies in the oven? run out of gluten free flour? these yummy little coconut cookies are for you.
Ingredients
50 g butter
1/2 c sugar
1 egg
2 c dessicated coconut
1/2 tsp almond or coconut essence (optional)
Method
Melt butter in a pot, add the rest of the ingredients and mix thoroughly. put teaspoonfuls onto a greased oven tray (or use baking paper), these little bikkies stay almost the same size and shape after baking so you don’t need to allow for spreading.
Bake 12-15 min at 180 C until the edges are a golden brown and the tops are just beginning to colour.

I need to bake some cookies tonight for a group which includes 1 gluten free person, forgot to go shopping on the way home, so got to make something from what I’ve got in the cupboard and this recipe is perfect. I remember it from way back - before gluten -free was invented really!
