Hokey Pokey

Ingredients

5T Sugar
2T Golden Syrup
1t Baking Soda

Method

Put sugar and golden syrup in a saucepan, heat gently, stirring constantly until sugar dissolves. Increase the heat and bring to the boil. Boil for 2 mins. Stir occasionally, if necessary to avoid burning. Remove from heat and add the baking soda. Stir quickly to remove lumps and until the mixture froths up. Pour into a buttered tin immediately. Leave until cold and hard, then break into pieces. Delicious served on top of vanilla icecream.
