Large Family Pizza Base

Ingredients
1 1/2C Rice Flour
1C Tapioca Flour
1/2C Potato Starch Flour
1T Xantham Gum
1/4t Salt
1t Unflavoured Gelatin
2 1/4t Dry yeast, or 1 x 8g Package Elfin Dry Yeast
1C Tepid Water
2T Oil
1t Vinegar
1 Large Free Range Egg, at room temperature
Method
Preheat oven to 210oC. Combine flours, xantham gum, salt, gelatin and yeast in a bowl. Add cooking oil to tepid water. With an electric mixer, slowly add the oil/water mixture to the dry ingredients. Then add the vinegar and the egg. Beat the dough on high speed for 3 minutes. On an oiled baking tray, cover the dough with plastic wrap and using a rolling pin, spread mixture out to form an 10-12 inch circle. Do the same with the other half of the dough. Bake crusts for 8 minutes. Remove crusts from oven and top with pizza sauce and your favourite toppings. Return to the oven and bake for an additional 15-20 minutes or until crust is crisp and lightly browned and cheese has melted.
Makes 2 large family pizzas.
Alternately make individual pizzas by rolling mixture out into 8 x 4-5inch circles.
For Stuffed Crust Pizza, arrange thin strips of mozzarella cheese around the edges of the pizza base, fold over the dough, and press seam closed with fingers.

Not a bad base - worked well when I used my pizza circle tray to shape it. Didn’t work so well when I tried on a normal tray to get a circular shape.
Needs a bit more rice flour to the mix ( I added it as I was shaping) or you can’t get the plastic wrap off the dough. Though this could just be me hehe.
The base was yummy though. I froze one and then baked it for lunch one day just sprinkled with cheese.
