Marshmallows

Nothing like marshmallows melted over a bbq or open fire in summer, or melted into a hot drink in winter. mmm
Ingredients
2T Gelatine
1/2C Water
2C Sugar
1C Water
1t Vanilla or Peppermint Essence
Coconut or Icing sugar
Method
Combine gelatine and first measure of water. Leave to swell for 10 mins. Place sugar and second measure of water in a large saucepan. Heat gently, stirring constantly until sugar dissolves. Dissolve gelatine over hot water, then pour into the sugar mixture and bring to the boil. Boil steadily for 15 mins. Allow to cool until lukewarm. Beat well until very thick and white. Add essence. Line a large tin with baking paper, wet the baking paper and pour int the mixture. Chill until set, turn out of tin and cut into squares. Roll in either coconut or icing sugar. Keep chilled.
